After a lot of debugging and reading eBay finding api, I seem to have worked out what my problem was..
I discovered that my client had set their eBay shop to sell "worldwide", although they were UK based, this meant it was not showing up with en_GB locale set in money press. Unfortunately I haven't yet worked out how it can be set to worldwide in Money Press, so I've had to hard-code the URL to make this work.
It now correctly displays my client's eBay listings, although it is shown in $ USD, which I don't want in this case so am playing with eBay filters to see if I can fix this.
At least it's working correctly now - at last!!
This may be the same problem other people are having here, I will update the MP guys that this was my problem, I hope they will fix the plug-in to allow the world wide option rather than a specific country/code.
I hope that the currency can be overridden but not found out how just yet, this is the first time I've used the eBay API's so a bit of a learning curve over the last couple of days.
I can't guarantee this will solve everyone's problem with local eBay sites, but I suspect it may well do in a number of cases.
I will now update MP folks and hopefully this will be updated so I can remove my hard-coding :)

Have you had any difficulties with regard to 'affiliate settings' ?
I have tried several ways to get this thing to 'track' my affiliate ID with eBay Partner Network, with no apparent success.
The tracking code is simply not showing when clicking-on any listed auction (locale en_GB).
Any assistance would be gratefully received.

Sorry I haven't tried the affiliate set-up yet, I expect I will find a similar problem though :S
One fix I used, which may or may not relate to your issue - sounds like it may do - was to add a new field to the Finding query (PHP coding required). Namely the "LocatedIn" parameter. In the case of my current customer this was relevant because they listed their products on the UK eBay site, but had set their selling regions to "WorldWide". This resulted in no items showing for the seller at all, in their case this is why the "LocatedIn" field addition fixed this.
So far I have fixed about 10 issues that were just plain bugs, and added about 50 lines of PHP just to get it to do what we need, and we're not doing anything that complicated or unusual!
To be fair on Cyber Sprockets, there are so many different ways the eBay API can be used it would be extremely difficult to provide a plug-in that did everything out-of-the-box. In the end some coding will have to be done in many cases, which means PHP skills and knowing the eBay API, which is quite large and in my view not terribly goodm, it definitely is not well documented :S
Some of the bugs do indicate a lack of thorough testing though, again I can see why this would be difficult because of the variety of ways that the eBay API can be used.
Not a bad plug-in on the whole, considering it is a Wordpress plug-in. With a few bug fixes it will work for basic use. Anything other than basic use will require PHP/eBay API coding though.
As a starting point it's useful, which is how I'm using it, it doesn't do what we want out-of-the-box and does require programming skills to get round that fact.
As a result of my experiences with WordPress and this plug-in, I have started developing my own plugins/code using Zend Framework. In the meantime I, like everyone else, will have to resort to some debugging and code fixes (hacks) to get this plug-in to do exactly what you want for your specific requirements.
I hope this very brief comment will help people considering using this plug-in :)
